Oh my goodness. I thought my wife loved me after the Zing Me scones, but after this meatloaf…well. As long as I make this every week or so, we will have absolutely no marital problems. The original recipe comes from here, but I’ve made a few changes. We’re on a budget, so I can’t imagine ever using a pound and a half of beef for a single dish. However, if you are on a low sodium diet like we are, that website’s recipe archive is a godsend and a great resource. I use a recipe from there at least once a week. Also, I hope you haven’t gotten too used to pictures with my recipes, as I tend to cook while my wife is out, and taking pictures while cooking, well, it’s a recipe for disaster. There will occasionally be pictures, but only when she is home and willing to be my own personal paparazzi.
I love Scott Pilgrim. The movie, the books, everything. To the point I’ve considered buying certain game systems if only to play Scott Pilgrim games! Anyway, when I was re-reading Volume 2 (Scott Pilgrim vs. The World), I knew I had to make the vegan shepherds pie and tea it up! It turned out so tasty, it’s one of the few things I will eat as leftovers! I used Marsala, which is smoky with a bit of a cinnamon kick at the end, and it just amped up this dish so much. Warning, my version is decidedly not vegan.

Okay, so I cheated a little bit. My first post here and what do I do? I use one of my wife’s recipes. But it’s a tasty one! And I made the buns…but only put the Skinny in because Drew told me to. He’s very pushy with tea, you know. Turns out the sweetness of them nicely balanced out the heat of the sloppy joe mix, so it all works out. But these sloppy joes are amazing…try them once and you’ll never eat that canned mix again! Which is good, because the sodium content in that mess is sky high and if you’re not watching your sodium intake, you should be, especially if you’re trying to lose weight as so many of us are (but you’re all beautiful to me!). If you’re not interested in bulking up the ground beef with TVP, it’s also very tasty when made with a full pound of ground beef.
